The minimum thickness I would use for a chain lock is 10mm, though 12mm is about the thickest you can go before it gets too heavy to be considered portable. At that level of thickness, you'll need a portable angle grinder in which case no thickness of lock will be able to stop it though it will make a heck of a lot of noise.
For U-Locks, I would get at least 14mm or ideally 16mm or more. U-locks are easier to cut with an angle grinder vs chain due to the chain links flopping all over the place.
Basically know that if a thief is determined, they'll get your bike, but the purpose of the lock is to deter crimes of opportunity or to make your bike harder to steal than the bike next to yours. If you live in a high crime area, I would recommend using two locks and make sure to lock according to value (eg. lock the frame first, then rear tire then front tire, etc) and make sure that whatever you're locked to is solid and can't be removed.
Another tip is if you lock to a bike rack, check to see if there is any colored tape. Bike thieves will pre-cut the bike rack and cover the hole with tape and then later slide your bike out from the hole.
