My Costco had the Wagyu Ribeye for half off yesterday. I was tempted at the original $100/lb price, but finally grabbed some this time.

This is the Superior, CO store. Seems like some stores are already out of stock and others aren't on clearance yet. For those with stock at full price, I'm guessing they'll go on clearance at some point soon. The * on the price tag means it is discontinued and will no longer be restocked, so for stores with no stock you might be out of luck. The price ending in .97 means it's a manager special, so other stores with stock may or may not follow suit unfortunately.

This item doesn't appear to be on the Costco website so the required link is to an older deal when this first showed up in stores.

What is Wagyu? I remember when I was young we heard about Kobe beef, where the cow is suspended and fed beer. Is this a variation of that?
Kobe is a trade designation for one specific variant of Wagyu.

with A5 wagyu, there's no need to sous vide. With sous vide, it's good for making stuff tender and at the right temperature to render the fat, but with A5 wagyu, it's already tender and fatty so even if you slightly overcook it, it will still be tender and delicious. Sous-viding a5 wagyu is pretty much a waste of time.

For that price, it better walk on water.
It floats on water, because of all the fat. LOL.

Is the deal just on the rib eye or the NY cut as well? My local Costco only carries the NY Wagyu.

As someone who has done both sous vide and regular cast iron on thin cut steaks, I'm going to disagree. Sous vide is great for thick steaks where you want the steak to already be at an ideal temp and you only need to add a crust. For these thin cut wagyu steaks, adding the crust will already put it at a high enough temp to cook it all the way through. Sous vide is not only unnecessary but could potentially result in a higher final temp than you'd want. Very difficult to get 137F med rare and a properly Maillard-ed crust when your steak is less than 1" thick.

Also, wagyu has a much higher tolerance for over/undercooking because of the marbling. You can eat wagyu raw as sashimi or even close to well done because the marbling helps temper the negatives of overcooking.
These are not particularly thin the ones I've seen at Costco. But sous vide for A5 is not necessary and having to deal with the moisture from sous vide makes it not worth it. Just bring it to room temp and sear and it's good to go. Even well done it's tender as heck.

My local Costco had it randomly on a freezer shelf where the frozen fruits like acai are kept. There were only 3 trays left and marked at full price. I tried scanning it at self checkout to see if it's actually on clearance and it returned an error prompting an employee to come help. She entered a code and scanned the item. It threw out a do not sell message. Weird. I asked her about the clearance price and she said Costco does not do clearance.

Wagyu means Japanese beef cattle. Kobe beef is the location of the cow. Kobe, Japan.

when I used to travel for work to Taiwan, we'd go to this place where you'd grill 1/4" sliced cuts of this stuff over a little charcoal grill in the middle of the table. I'd be sweating out all that rich fatty goodness from the meat and drinking a bajillion Taiwan Beers on the flight home. good times!
