I'm thrilled they aren't using EMMC for once.
I'm typing on Makulu Shift that not only allows you to use several desktops at once; but also lets you load it into RAM (yep, you can remove the usb stick and keep going without it using internal drives at all) - and you can even change to all the other desktops *while it's still loaded into just RAM*.

I own one in this class, with a notably weaker CPU, my middle school kid uses it. It seems OK, so this could meet the needs for a lot of basic uses. And if the user puts a lot of wear on the computer, better to do so at this price point.
But TBH I'd look for something with better CPU, RAM and SSD if budget allows and it's something you might use for a few years.

Oh yeah. Just throw that on. Then spend a few dozen hours trying to get the drivers, printing, etc to work. And lose the ability to install any Windows apps.
Printing on Linux (at least Ubuntu) is better than Windows.
Can I get some examples of apps that will be missed? All that come to mind require higher end gear (adobe products, Vallorant, etc).

While audio / video / other peripherals may work out of the box, do you know if wifi support for realtek chips and fingerprint login support exists in linux distros without having to install from some repo?. Say example Ubuntu?
Regarding fingerprint log-in, I can guarantee it will not work, as this laptop doesn't have the supporting hardware (or did I miss it?).
Fingerprint scanner, next-gen wifi (expect reduced speeds), NVidia DP over USB-C when an AMD iGPU is present , specialty audio DACs, custom firmware for features such as LED matrix or maximum battery level.
