Coleman makes a 4 in 1 air mattress that's pretty cool. It's essentially two twin mattresses you can zip together. So you can use it as two twins, a single king (but separated so movement doesn't transfer), or as a single double thickness twin. We have two for camping, so we can use it as a double thickness king as well.
Normally we just set them us as two twins though, because the configuration works better for our tent and we disturb each other less.

No. It's like the Intex ones with the built in pump. Turning the valve turns the pump on. One direction inflates it and the opposite deflates it. The middle turns the pump off and seals the valve.
You can leave it plugged in to make it easier to inflate it a bit if needed but you can't leave the pump on.

For additional safety, consider putting crash activated airbags at the bottom. In the event of a hard landing, the air bags auto inflate and deploy for the safety of the occupant on top.

Mother-in-laws can make noises from as little as 50dB (the sound of a typical modern dishwasher) to as much as 140dB (the sound of a 747 upon takeoff.) Hopefully yours just goes "whoosh!"
