Inside and Slay the Spire are very good games. Slay the Spire might be better on tablet or even cell phone than Switch. Highly recommended though.

In that case, there is no way of purchasing the games without opening the box. Luckily, the boxes don't come with any seals that would indicate that they have been opened so it is often suggested here to open the box and boot up the console, setup your Nintendo account, then buy and install any games before wrapping up the console. An added benefit to doing this is that the console will be ready to play upon unwrapping so your kids won't have to wait around to download any system updates or long game downloads.

I haven't played it yet but bought Scott pilgrim for the co op. Thats on sale. Otherwise the overcooked series is my absolute fave couch co-op but their latest complete edition compilation is not on sale right now)

One game here that rarely goes on sale and is phenomenal is N++ (Nplusplus). You may remember playing it's predecessor N+ in flash games on school computers in the early 2000s. Highly recommended

I don't see one comment here about monster boy and the cursed kingdom. Awesome game with beautiful art at a steal for $9.99. One of my top experiences on switch. If you like Metroid or castle banks type games this is a perfect game for adults or kids.
In unrelated Switch news. Anyone ever install the Slickdeals extension in order to get a free $10 Target Gift Card? I'm wondering if that is legit or not since I keep seeing it pop up every time I'm on Slickdeals. If it is legit does it get emailed to you or regular snail mail, which would be lame?
Both unravel and unravel two are amazing games. The first one is only one player but two is co-op 2 player
Me and the mrs just started playing Unravel 2 and absolutely love it. Is the first one worth playing down the line?

I did just order Demon's souls during a BF b2g1 promo for PS5 so now I'm wondering about Dark Souls. I'll keep this in mind for the future too.

Word of advice: it's probably better to go into Iconoclasts not thinking of it as a Metroidvania otherwise you may leave a bit underwhelmed (I know I did, also applies to Owl Boy). If you want a true, traditional Metroidvania also made by one person with the proceeds primarily supporting his sick son, I highly suggest Axiom Verge.
Regarding Dark Souls, do you already like the Soulslike genre or will Demon Souls be your first? If you know you enjoy it, it's well worth it, but if you aren't sure, then wait until you play Demon Souls first (it's similar enough where if you enjoy, you will probably like the other). On a similar note, if you want a Metroidvania Soulslike hybrid, be sure to check out Salt & Sanctuary which is fantastic (Blasphemous is also good albeit a little less Soulslike).
