Don't buy sets. The are manipulating you into buying shit you don't need. You really only need about 3-4 knives in your kitchens. I personally go with Japanese knives because I love hand forged quality knives. Stamped knives are normally quite a bit softer.

I generally agree, but was comparing sets to give context not advocating a general knife ownership paradigm, lol.

The $30 7" Twin Signatue Santoku visual imperfections, no refund no returns is thin stamped steel which flexes. I purchased one last year and tossed it in the trash. The edge had chips in it. Could not be sharpened. edit: YMMV, it is $90 on Amazon and has 88% 5 star reviews. I have had a Twin Signature Chef's which is forged for years but not happy with how it fails to hold an edge. No more Twin Signature for me.

The $50 7" Four Star Santoku visual imperfections $50 is a likely a quality forged knife compable to the Wusthof Classic and is only $20 more. I ordered one.

The $20 4" Four Star Paring visual imperfections no warranty no returns: I purchased this new last year in widely available promo pkg for $20 at the time. Excellent quality forged sharp knife which has held its edge. The same knife with visual imperfections no warranty no returns for $20 today is possibly slcik, you decide.

Not remotely. It does not reflect heat back or provide the moisture conservation that you get with cast iron. Some pp buy the Staub over L.C. just to get the condensing nibs. It depends on the dish. A small amount of evaporation is good for concentrating flavors but a baker may want the tighter sealing cast iron lid of the Staub.

I bought a W-S demo oven with chips just to get the lid to use on my euro multi-ply skillet. Phenomenal compared to results I get when using a glass or ss lid on tghe same pan when braising of low temp cooking.

Used cast iron lids may ocassionally be found second hand. Cost is quite high on ebay. Euro sizes are hard to find.

I would think not. The cast-iron traps heat better than glass. I have so many pieces of Staub and use them a lot for bread baking and braising. I like them so much better than Le Creuset.
