These two books were published separately and compiled into this set. The information you want about brisket is in the Franklin Barbeque book.

Edit: he edited his comment, ninja style. Originally he commented that there was a book about steak but nothing about brisket.

I have the hardcover of the BBQ book. It's very good. Both as a book to read and as a cooking guide.

I will caution about paperback cookbooks though - being able to open to a page and have it stay there is really helpful with cooking and most paperbacks dont do that.

I wouldn't base a food experience (and take out at that, because a lot of factors can effect the food like time to travel etc. that can ruin an experience with a good meal) on his cook books or recipes. I follow his recipe for ribs and nothing can touch them. I'll always make an extra set to experiment with to try new things, and the Franklin ribs always win out.

Franklin's bbq is not for everyone; however, I have watched people wait in line many days that Franklin's is open for 4 hours or more just to eat at Franklin's. This has been going on for over 10 years. Franklin has won awards and has been showcased on many programs. Franklin's sells more bbq in two to three hours (typical hours open per day) than most places sell in a day. Once again, Franklin's is not for everyone but people keep lining up early to eat his food.

Maybe Dickie's bbq might work for you. I have not read the Hutchins bbq book yet.

If you are in Dallas and that's your go to,you don't know much about bbq there are a ton of better places than Hutchins and Buccees lol

LA BBQ was really good when I visited Austin. The LA stands for LeAnne Mueller. She is daughter of pitmaster Bobby Mueller of Louie Mueller in Taylor Texas. Hutchin's BBQ recently acquired Bobby Mueller's son, John Mueller as their pitmaster this year. Ironically, John gave Aaron Franklin his first gig in bbq at his former BBQ joint back in the day. Oh, and John Mueller is an amazing pit master. But also very mercurial to deal with. I hope he's gotten sober. If not, I wouldn't count on him staying at any restaurant for long. He co-ran LA with Lee Ann in the beginning, but was drinking way too much and being weird or hostile to customers. The more you know....

Wasn't really impressed with the first book. Thought the documentary was just as good or better. Not sure I'd spend money on the books again.
