I have a bunch of these Smartlife devices....my technique is to literally just turn off 5Ghz and connect the devices. Once connected, turn 5Ghz back on.

Yes. The Amazon description says they do pair with the water detector gateway. And Govee's responses in the question section confirm that. I had been wondering the same thing.

Only the hub is wifi. The sensors talk to the hub (or SDR radio) over 433mhz, unencrypted. You need the hub included in the kit with these specific sensors. Their own hub is limited on how many sensors it can support but I don't know the limit. An SDR radio setup has no limit but it is very tinkery.
