They are X50Cr15MoV steel. Cangshan is endorsed by Thomas Keller himself. They are carried in Williams Sonoma. They aren't the finest knives but they are well made with good German steel.

For this price, if you are in need of a knife set like this, you cannot go wrong. This is a great value.

Disagree. You should try this set yourself before spreading misinfo here. Cheap but good quality, made in China, that is just the reality. You can pay 3-4 times more to get a set made in Germany but why would come here to find a deal?

We are talking Thomas Keller and Williams Sonoma. Not Rachel Ray and Walmart.

The company is owned by a Chinese family that immigrated to the US and it headquartered in California. Yes they are made in China but what isn't? Your comments come off xenophobic.

I own this set, paid $80 at a warehouse and was pleasantly surprised by the quality. Great price!

I bought these and they are fantastically good quality knives at this price. I'm using them in my kitchen as my main knife set.

It's OK for the price just for the handle on steel, need to put a new edge on every knife after gotten them. Craftsman and quality inspection are so so, inline with the price. Good to have for borderline abuse use... winter beater-isk...

china pays their ways into things. You've never heardof people being paid to endorse things and stores being given a "good deal" to carry products?

These are mediocre, overpriced knives. I got a set from Costco and promptly returned them - they weren't worth the original $100 price tag, and I'd say they'd be about average at best at this price.

I've got a range of knives from the ultra-cheap Dexter/Forschner up to ones that cost a few hundred a pop. These are much closer to the bottom than they are to the top. If Thomas Keller wants to put his name on these for a few bucks, that's on him.

Got these at the warehouse a few months ago and am very happy with them. Super heavy and durable. Half of what i buy is probably made in China so who really cares if it's not the $250 quality knives made in Germany.

Mainly looking at this for the slicing knife. Any input on the quality of that knife specifically?

Not sure what all the knife snobbery is all about. I've worked in several restaurants, and they all use cheap knives from target. 🤷
Maybe the hundred dollar knives hold their edge a bit longer, but due to all the abuses these things get at work, it doesn't really matter.
