Tramontina for commercial kitchen use? Never heard of that. If you want cheap knives that are sharpenable and will stand up to years of abuse, maybe look at Dexter, Winco or Mercer. They really are used in lots of restaurant kitchens and start around this price range. Or Victorinox Fibrox are a good investment.

I have some higher end knives at home but I use Winco's forged line mist of the time, which are every bit as good as my German knives but reasonably affordable. They cost more than these but aren't crazy. My suggestions are NOT paid or incentivized in any way, and I spent 25 years in the restaurant life.

This set is more than enough to get everything you need done in a kitchen. I can do 99% of my kitchen chores with just the chef and parring knife. Maybe add a bread knife if you slice lots of bread, and a Santoku is always nice, but you don't need to spend a fortune on kitchen knives. You could spend a metric ton more cash on expensive knives, and you'd be no better off as far as food prep goes.

Just remember you need some kind of sharpener no mater which knives you use. I'm not a fan of the electric ones that grind up your knives, nor really a fan of the pull-through sharpeners either. The Work Sharp Guided Field Sharpener is my favorite tool for sharpening any and all kinds of knives. [amazon.com] It has course and fine diamond plates, a ceramic rod with course/fine/fish hook edges, a small ceramic rod for serrations, and even a leather strop for polishing edges. The guides will get you started and you can adjust the angles if you want finer angles on your knives per your personal preference. I love my stones, but don't bother with them anymore.

Why do many people always feel the need to post to prove thier lack of knowledge?

To all of you...

These knives are great at this price for a casual cook who wants to do a decent job. Much better than other knives twice this price easily.

Serated Knives are for people who are clueless and buy dollar store knives. (except bread knife of course)

Honing a knife is the norm, and required for all knives to keep the edge straight. If you use a knife daily it will need to be sharpened once a year or so if take care of properly.

Now, if you are here to poop on the thread - go away and learn something first.
