I bought this the last time it was on sale. Memory is soldered but it does have 16gb. There is also room to add a 2.5" drive, which is what I did. I had to buy a kit from Amazon to get the connection cable and rubber housing to hold the drive in place. Able to play GTA 5 with settings reduced and plenty of emulators as well. Didn't want a gaming laptop as I have desktops for that. This is good as a powerful portable device that also allows me to play a few games on the go or on the sofa. I'm happy with it.

Think this would be powerful enough to do light video editing? Not looking for a powerhouse machine as I use my desktop for heavy lifting. Instead, I'm looking for something I can use around the house or when I don't want to sit at my desk or while on the go. Think this CPU is powerful enough?

You can edit video on almost any laptop now a days with proxies.

Is it possible you missed the SO-DIMM? Everything i can find indicates 8GB soldered but 8GB SO-DIMM.

Not that I see a reason to want more than 16 GB.​

Seems like a good deal.

Frustrating they skimped on the connectors USB 3.2 Gen 1 and HDMI 1.4. Though this is rather normal. Also two USB A 2.0.

Yes, you should be able to. Plug the first monitor into the HDMI port. For the second monitor, get a USB-C to HDMI adapter (as low as $11).
