So if I use the shipping confirmation email to activate the phone, do I still need to open the box and pop the TW sim into the phone? The phone is a gift so I would rather keep it new in box. TIA

My phone is stil in transit, but I started the activation process using the link in the shipping email. When I got to the end the final screen showed "activation request submitted", and instructed me to insert the SIM, turn the phone off and on again, and make a call, which obviously I can't do until the phone arrives.
I believe that the last steps are required to complete the activation, as when I check the IMEI on one of the online sites that shows the phone's status, I see this:
"This device seems to be never used, as it has not been activated yet."
"Activation status: Not activated"
So I don't think you can leave it in the box, as if it's not activated it will not be unlocked after 60 days.

This phone will only work on Total Wireless or Straight Talk until it is unlocked after 60 days. You need to insert the provided SIM card into the iPhone 11 then activate it on Total Wireless service.

I am still confused about this part too. Everyone is mentioning about activation on Verizon network, isn't all TW plan is now Verizon and should it be all set?

Yep that's correct. If you activate it on TW it will automatically be on the Verizon network with nothing else for you to do.
