Thanks OP. Got the W6000 for $113. I don't have the Walmart Amex promo but WOWFRESH promo code worked. I had to try multiple times for the code to work. This is good enough till WiFi 6E become more reasonable.

Is this set up overkill for a 1200 sq. ft. apartment?

Hard to say. The nodes function independently, so you can always sell off a node if its not needed.

Probably yes. I'd try a standalone router of equal price first.

Well if you are getting effectively 2 routers Wi-Fi 6 for similar price /slightly more .. why not ? Just put them wherever you feel you have weaker Wi-Fi . Also it will eliminate all dead zones. You can use only one if needed. Keep one as backup or sell or gives someone or use both for stronger network.

This is what I would need the second node for. My bedroom and living room are split between another bedroom. I have an Asus AC1300 currently and seems like it's not strong enough to connect through walls.

Almost every room in my house has a ethernet port. Would these be a good choice? Would I be able to plug each into the ethernet port that would act as the backhaul? I'm pretty out of date when it comes to routers.
Yes, that's exactly what you should do. I have run mesh setups like this for years and it works great.

How good of a deal is this? As someone that knows nothing about mesh routers but will need one in the near future.
