I'm still on the 5X. Really want on-board music, but have been waiting for the GPS+Music battery life to increase significantly over 15 hours to upgrade. That's sort of my mental minimum. My use case is primarily for running. I run ultramarathons, and 9-12 hours is a typical finish time for me on a 50-mile course, depending on the terrain; that said, I've had races where I just don't feel so good, and end up down in the 14-hour range. My worst nightmare is a full run not being logged (if it ain't on Strava, it didn't happen). The 6X Pro technically was "up to" 15 hours with GPS+Music. But given that all my prior watches came in well under their claimed battery life values (especially my 5X), that wasn't enough to make me comfortable upgrading. The 7X claims 16 hours with FULL multi-sensor GPS and music. That's sort of right on the mental borderline... As exciting as any new fenix launch is for me (I've owned a 2, 3, 3HR, and now the 5X), I think I personally will hold out for the 7 Plus/Pro, 8, or whatever they decide to call it.
They also increased the width of the solar panel on the Fenix 7 and added a notch, which looks uglier but of course if you're into the more utilitarian look I can see that this isn't an issue. I'm digging the more "smartwatch" look of the Epix this time around.

For me the $1K price tag, even discounted by 20% is too rich, especially considering I recently got a 5XPlus sapphire with a titanium band for about $350. I'll be waiting a couple more years before possibly getting a 7X sapphire.
If you've got the need/desire for the 7, however, (as well as the cash), I'd get the sapphire model because these crystals are very difficult to scratch. It's one thing to have some patina on the frame of your picture, it's another thing entirely to have scratches on the picture itself. Your watch face is the picture you'll be looking at whenever you look at your watch.

I miss the old pre-fenix-5 charging cradle/clamp, which allowed me to run with it strapped to my wrist and connected to a battery pack between drop bags as needed. That's what I did to stretch my 3/3HR across 100-milers; haven't ran anything longer than a 100k since I got the 5X, but I'd probably have to switch to UltraTrac with HR turned off to make it work.
Style is obviously subjective, but I'm sort of loving how they relocated the screws off the bezel and onto the lugs. I always found those bezel-mounted screws from the fenix 3 onward to look a bit tacky.

I have never had the need to use UltraTrac, but reviewers say it does heavily impact the GPS accuracy. I believe you can turn off other things before going UltraTrac (such as bluetooth connectivity but then again if you're using audio that's obviously out of the question). Before going Garmin I used to have a Suunto, which had several degrees of GPS accuracy that you could play with to extend battery life, I was under the impression that Garmin had something like that but then again I have never had to use that for ultras (never done more than a 50 miler though).

Yes, UltraTrac is horrible for anything faster than a slow hiking pace. But at least I'd have something and not a record that ends at 70-80 miles, I suppose? There are activity-specific settings for GPS, GPS+GLONASS, etc., but they seem to have a minimal impact on battery life for me; the biggest battery saver seems to be turning off HR. In any case, having to even think about all these considerations is why I haven't pulled the trigger yet. Waiting to get to the point where I can run an average 50-miler (my preferred distance) with full GPS/GLONASS/Galileo/whatever at constant polling interval, with HR, and music on without wondering if I'm going to have enough juice.
FWIW, I may just say screw it, pull the trigger on this deal and grab a 7X. My battery life is getting worse and worse on my 5X, and I am a little nervous about it holding up for an upcoming 50 in May. And the more I look at it, the more I fall in love with the 7's subtle design changes (though I respect that it may not be to your liking). Hmm...

Also, the AMOLED screen is nice, but I don't stare at my watch screen often enough to find it worth the tradeoff in terms of battery life. I had an Apple Watch 6, and I tried out a Garmin VENU a few years ago and I'm fine with the crappy pixelated screen on my old 3HR. The Fenix 7 will be a big enough upgrade for me as it is.
