Is body fat % accurate on these types of machines?
Not really. It's based on a formula, which takes your age, height and weight and labels the excess as fat, which is obviously going to be inaccurate. I guess its a good overall indicator, but nothing fancy.
Anyone know what the thing is actually doing to generate things like "visceral fat" or "body water percentage"? Some sort of electrical stimulation of your feet to figure out the resistance and effectively tell you how fat or watery your feet are?

These types of devices, at this price point, will not be 100% accurate. Some maybe not even 50%. This one, it's giving a different reading than 3 other similar scales I was sent for free. In fact, all 4 have different readings.
But it will give you a generalized idea where you are in your overall body health. That, along with an honest assessment of how you look and feel will let you know if you're trending up (getting healthier) or down. For that, I feel it's worth $20. Easy to track in the app too, one we all probably already have in our devices already.
If you want real numbers and a good baseline, see a doctor and certified nutritionist. Then compare and use that along with scales like these to track your progress. Probably cost a few more bucks, though...

Most of them use a tiny electrical impulse from the metal pads on the face of the scale to take small measurements. A lot of things will affect the readings. Foot placement, skin callouses...hell, I'll get different readings when the bottom of my foot is dry, and when it's moist out of the shower.
Like I said above, you're not going to be getting dead accurate readings, too many variables. But you will get a generalized idea that you can use to track your overall fitness/health.
