Think I might get this one. Any thoughts on it? Looks new, no reviews. But the Insignia brand is a quality one, and I want a dual basket air fryer if I buy one.

The other approach you might be able to take is to buy two separate air fryers that are at least 4-5 qt capacity.
Yes, I realize bigger space is needed. But if one of them breaks, then you still have the other one fully functioning.
I've seen some of those size models often in the $30-40 range. Not advocating to do that but just wanted to offer that as a possible alternative.
The damn knob on my analog basket air fryer broke off. So it's been unusable and can't find replacement knob. Dual baskets can be convenient, could cook raw meats on one side and frozen appetizer foods on other
And I'm *guessing* having them both on at the same time might make them both perform underpowered.
I see an angle to automate small batch cooking. Can cook in one. Prepare food in other basket. WHen first one is done, pull it out. Start other. Let first one cool for a few min. remove it, remove food to plate, prepare next batch in basket. Return basket. Now second one is done, pull out. Start first one. Let second one cool for a few min.....
