They don't have a shelf life of 10-25 years though.
According to the directions, it takes 30 cups of water to rehydrate the full can. That's 15 lbs more weight once it's rehydrated.
To be fair, I can't find frozen potatoes in my grocers freezer section so maybe I'll be needing this sooner than later lol

Of course, if food smells bad, looks different, the package has ballooned in size, etc. you should not eat it.
it all went into a couple Tupperware containers that I still have the lids for.

The first review that on Amazon says the directions calls for way too much water. Given potatoes are about 80% water, it takes 1lb 7oz x 4 = 5lb 12oz water to make 7lb 3oz of rehydrated potatoes.

I too was not in the know about funeral potatoes. My sister in law insists on making "funeral sandwiches" with the whole Easter ham before anyone gets to the house. I remain in the dark where these names come from.

I remember ordering one of Augason Farms' survival kits at the very beginning of COVID. As The Oregon Trail taught me, it can't hurt to make sure you have some food and water just-in-case. They got slammed with orders as apparently I wasn't the only one that had this idea. Took months to deliver. I pinged them two months in and they were like, "it's just about to ship!" It arrived 2-3 months after that, at which point I had completely forgotten that I had ordered it.

Haven't been in a situation where I have needed to eat any of it, so cannot comment on the quality. Having eaten MREs in the past, I would assume that's a good thing.

As a person who consumes this type of product regularly, it's actually used quite a bit in commerical establishments. when canned bacon first appeared on scene about 15 years ago, its stole was already used in most fast food places (mc Donald's burger king etc... why do you think you've never seen bacon being cooked anywhere) then companies started pushing them as pre cooked mini packs, like Oscar Meyer and even now Costco.
back to the potatoes....if they are like the other ones I had (orida) they tend to be salty. you can try an oversoak and drain /squeeze which helps a bit with the salt.
real potatoes take too long to cook in the morning.
