so it is easy to see that the heat output is much higher per unit volume for the smaller units
The insulation matters - if the insulation is not great then the heat loss from the larger units is an even bigger drawback since the surface area increases much more rapidly and that is where the heat loss is happening
Summary 2 of these will outperform a 4QT model and certainly outperform a 12 QT model - you may even be able to do 2 batches in the time it takes the large unit to cook the same quantity of food. The larger units also lead to piling things on, so the airflow is not as good as in this smaller unit
