I have this exact model, it works fairly well but sometimes needs to be double-heated to get a reliable seal if your submerging meats (sous vide). Also, my biggest gripe is that the angle and swing path of the door forces you leave a lot of extra bag at the top to reach the heat strip. In other words, it seems to waste about an extra inch (compared to other models) at the top of every bag if your items are thick. (ie fillets).

Pro Tip: Make sure you buy the legit bags from amazon or Costco, there are quite a few cheapo substitutes on amazon that dont seal very well and waterlog your marinades.
I agree with you about the steep angle wasting bag. I figured out a simple solution by propping the food off the countertop with either stacked cutting boards or an inverted bowl. That way I can push the bag in farther. As far as double sealing, practice to gauge distance from top of the bag to the reservoir to estimate the exact line for the heating strip. I manage to do double seal consistently with about 1/4 inch apart. I don't recommend going any closer due to the risk of compromising the first seal.

The NESCO VS-12 is the best sealer under a hundred bucks (I paid $70 Nov 21). may be hard to find now, but it is a great unit.

Does this unit have replaceable gaskets? My old unit won't vac very well unless I moisten the sealing gasket with a paper towel and the old Costco unit with the internal bag holder doesn't have a replaceable gasket.

Costco sells a Kirkland branded vacuum sealer bags. It's $25 and has 2 extra rolls over the Food Saver version and has extra precut bags. I got it for $20 when it went on sale about a month or two ago. So far it's holding up well.

Edit: here is the item number
Kirkland Signature Vacuum Sealing Bags, Assortment Pack
Item 8122017

it has
3 Rolls 8in×20ft
4 Rolls 11in×16ft
50 Precut 1qt Bags

where as the Food Saver brand has
2 Rolls 8in×20ft
3 Rolls 11in×16ft
46 Precut 1qt Bags
Great tip. I didn't know there was a Kirkland brand option. It's showing $29.99 for me now though, still a better deal over the Food Saver brand at the same price

This is almost always on sale at this price. I bought this for sous vide and food storage on the side.

End up using it more for food storage as sous videing can be a pain the ass sometimes.

That said. having the roll in the machine is great when you're packing up 15 lbs of individual steaks or 2 cut up chickens. It has the built in slicer, so you can go into "production" mode and just cut / seal /cut/seal/cut seal, etc.

FYI... you will never use this and it'll stay in your pantry for years and years. Trust me.
We use our vacuum sealers all the time. Depends on the person.

Sous vide or buy in bulk, these get used all the time. Probably a sealer every day to keep open food items fresh, especially items contained in vacuum containers with lids.

Are most the food you buy packaged with heat seals?

I got a similar Foodsaver vacuum device a year ago, and found it to be not very convenient since it's stored away in a cabinet and not handy. What I wound up doing is scoring BOGO deals on the FoodSaver ziplock vacuum bags (quart and gallon) and using a handheld wine vacuum pump like this [amazon.com] to suck the air out of the bags. It's handier and does just as good of a job, as the pump is exactly the right size to cover the "valve" in the bag.

Depending on what you store in the bags, they may be washable and reusable to save money.

For my occasional usage, this is the perfect solution. I just wish I could have known this beforehand and saved the $100 on the machine.

the ziploc style bags were worthless for us. poor seal and the seal hole sticker around the hole, came off all the time in the freezer. the standard seal bags work great and can be put in the freezer, unlike the ziploc style.

I actually really liked to use mine for lunchmeat and cheeses in the fridge. It makes it last a very long time and it's useful to be able to open it a bunch of times.
However, I have this exact model and we hate it (and this is our third foodsaver). It doesn't seal all that well, the angle is obnoxios and wastes tons of bag. Also, the seal is way far away from the edge which also wastes bag space. We use it often to seal chip bags and this causes more waste.
