Buddy of mine has two Ooni stoves, loves 'em, and last summer I bought a two-pie propane oven from another company and LOVE the pizzas these things make. The smokiness of a wood stove is great, but for me the convenience of propane puts it on top for me – turn knob, ignite, go build pizzas and as soon as you're readu the oven is too.

These things get so hot, pizzas cook in almost no time whatsoever. The prep is what can take a lot of time, so I'll often make a bunch of toppings and make pies one weekend, then have lunch for days, then enough prepped toppings to make another round the following weekend. Either that, or have some friends over and everybody can build their own pies at once (bought 4 peels for this exact reason).

I have a BULL outdoor grill that goes well beyond 700 degrees but I prefer the way it turns out at 550 in my oven on the same lodge. I do 00 flower. san marzano tomato, NY style...
Not sure if this would be a big difference, but ut does seem to get great reviews
The Ooni is better suited for neopolitan style pizzas. For NY style, I think most would be just fine with a baking stone/steel in their home oven.

I got a PizzaCraft PizzaQue for $75 a few years ago. Works the same as this, 700-800 in 12 mins, pizza done in 5 minutes

I can knock in nails with a pipe wrench and loosen and tighten pipes. I guess I should never own a hammer.

It has a purpose. The main thing being the max temp. If you're trying to do your best recreation of a Neapolitan style pizza you need temps hotter than the ones from a kamado. If you're reheating a Digiornos frozen pizza, I guess your Kamado is fine for that.
Couldn't agree more. I love my Kamado and it's amazing for long cooks, rotisserie, and searing but it's not the right tool for cooking pizzas. You can do them in a pinch, but it requires running it at full blast for an hour to heat up a giant ceramic cooker for what amounts to a 2-5 minute cook. It wastes a ton of charcoal and it's incredibly inefficient.

Real pizza ovens work fundamentally differently. Outside of the stone there's really no thermal mass to warm up so preheating only takes around 15-20 minutes. Also, they don't heat evenly which is a good thing when cooking a pizza. Heat is primarily reflected off the top of the oven which applies more of it onto the moisture-rich toppings. The crust also sits right next to the flame which gives the leoparding that people generally only see from gourmet pizza restaurants.

I've been thinking of getting a pizza oven for quite some time and this deal just pushed me over the edge. I'm not fooling myself here. There's no way I'm going to save money by getting this. However, I'm really looking forward to learning how to cook a proper pizza and not having to deal with the hassle of ordering from a place and being limited by their menu.

I've been watching the ooni forever. But there's got to be a cheaper pizza oven with same or better results without building one. Anyone have alternatives? I am a cheap pizza snob.
This is the one I have and it turns out amazing pizzas for half the price. It's not gas but there is a way to convert it to gas if you really wanted to.

What was the price on their sale?
Not at Bloomingdale's, but the Black Friday sale direct from the website was $480 for just the oven. Since the Costco includes a turning peel (plus anytime returns I guess?) this is a superior deal.

problem with the Oooni 16 is that it takes a long time to reach optimal temps (700F+). Around 40 minutes preheat. With the Ooni 12 it only took 30 minutes and reaches 900F.
Mine too. I tried troubleshooting it forever, and Ooni finally sent me a whole new oven because it just wasn't getting those temps. The new one was marginally better. I fixed everything by just buying an after market door. I close it when I pre-heat and reliably get to 800oF after 15+ minutes. Saves lots of gas. It's the way to go!

That's not true at all. My 16 gets to >900F in 25-30 minutes
I've heard so many varying things. Some folks are very lucky and have your results. Neither of mine (had one, then got it replaced after weeks of troubleshooting because the temps were so bad) ever got that hot. I swear it has to be something with the insulation under the exterior, which we can't see or fix, because I futzed around with the flame control, air mix, etc for a long time.

As described above, I finally fixed the issue by installing an after-market door. Now I can get those temps in 15-20 minutes.

Our community has rated this post as helpful. If you agree, why not thank

This is a good deal and gas offers you consistency. I have a large clay oven that I rarely use now as it takes time to get to temp ans also
i need a helper if I have a party as i cannot manage to keep the fire going and.bake pizzas. I am not using this oven but a modified bakerstone pozza oven that comes with its base. This oven has a better uniform temperature and I can get it to very hot if I want to. You however do not want to get it too hot. I get the best results at 850F. I get that oven to 1000F to burn all the char after I am done baking. The stones then get clean again. A barbecue will never allow you to get that high and you won't be baking true Napolitano pizzas that cook in about 60seconds. Do not buy the pizza dough at the store. Make your own and use pizza flour. I buy mine in 55 pounds bags (Caputo flour 00). That is only 35 dollars. I also use Caputo yeast. Water and salts are important too. I use RO water from my well and Himalayan salt. I use 72h fermentation, but I also have had good luck with poolish and biga recipes. Buy also semolina for stretching the dough. I use 67-70% hydration dough. Learn how to make the dough and to ball it. As others mentioned use san marzano tomatoes and good mozzarella cheese and olive oil. I like to add basil leaves before serving.

Is this better than a Pizza Pizzazz? I've been using it with Costco pizzas for 10 years. Works great!

I assume you don't get the 3 year warranty that Ooni offers if you buy through them? Might be a moot point if you have the Costco credit card, I should really get one of those.

I wouldn't mess with the way Ooni engineers designed the 16. If they felt like it needed a door like some of their other models then they would have installed one on it. But 700F is good enough for me. Higher temps means less room for error.

Out of 72hr, do you keep the dough in fridge after 24hrs ?
