$50 off the Education Price
$30 discount on AppleCare
Means you are saving minimum $80 - $130 for the Pro + AppleCare+ ($800+tax)
Considering Apple sells the refurb 2020 iPad 11'' Pro (NO M1 Chip) for $610 + $130 AppleCare this is a great deal as you are getting a two year newer iPad 11 Pro for only $50 more than what Apple is charging for the 2020 Refurb
And before anyone comes in here and starts spouting off about how great the Walmart refurb deals are - just stop.
iPads are fragile, have had multiple issues across models, buying one without AppleCare+ is a super stupid move

I've also had a number of iPads and never had an issue. I've definitely dropped it multiple times, hasn't broken yet. Any tablet can/will break though if you drop it.
Almost every MacBook has had a recall of some sort or common failure point so I would have agreed with you on MacBooks. But the real money makers for apple are reliable.

My rule of thumb with apple products is disable automatic updates and let the newest release marinate for a couple of weeks then see if people had issues with your model. I recall multiple instances where a normal os update bricked many ipads.
Other than that I think applecare is a waste if you aren't accident prone, don't have kids, and don't use it on like construction sites. Especially if you have a cover style case or magic keyboard. I've never known anyone as tragic with electronics as my mom (she's had phones run over by cars, left in taxis, fallen in toilets, inexplicable shattered screens), and she's been raw dogging (no case) an old 2014 ipad to work with minimal physical wear and only upgraded this year because it became unbearably slow.
