For a portable device, I feel 256GB it is kind of not enough. For desktop you can link NAS or add an SSD hub,

You also don't need that much storage for portable devices if you don't keep all your photos/videos on it, something which you shouldn't do anyway.

I bought a refurbished one from Apple a while ago with the same price. They shipped me the brand new one instead. Then I bought the OWC ministack STX for thunderbolt extension and storage. I'm happy with the duo.

The 8gb is $560, is the extra 8gb really worth $200? Or the cpu or gpu has more cores in the 16gb model?

the 16gb is better but it's not killer better. unless you are using something like a video editor, the 8gb should be enough. i have this exact machine and i don't see a ton difference over the 8gb on my non-m1 machine and i have half the 256 full but a big nas. the macmini is ok (this is my 5th one) but i am moving to studio max.

If you are doing photo/video editing, 16GB is a must. Got a bit slow down if opening Lightroom, Photoshop, Luminar plugin, ... at the same time to edit 100Mpx image.

They cancelled my order after 2 weeks. No longer an Apple fan.

I edit 4k video in Resolve/Filmora just fine with my 8gb M1. Runs very smooth and better than my old gaming desktop with a 1070. I'm sure 16gb would be nice, but far from a must-have. Watch some YouTube videos on it - works just fine.

Edit: Here's a video that shows how well the 8gb does with editing. The only significant difference they could find is if you are mutli-tasking while outputting a video - which is still doable, just slows things down. Aside from those 10 minutes or so, no noticeable difference: https://www.youtube.com/watch?v=WUXZBVLFNfY
