Is Final Fantasy VII good for someone who isn't a hardcore RPG fan? Like I like Paper Mario and Chrono Trigger, but nothing too hardcore...
Definitely! The Switch port is perfect for casual. You can do the full old school game but there's also the ability to play at x3-speed, you can turn off the random battles, and you can even make it so that your special moves are always charged. Final Fantasy VII is a really great game and worth checking out in general, plus its historical significance.
on another note - I also see that Block Quest Maker has killer reviews on Metacritic. They say it's like Mario Maker but for Zelda-type. I might give that a shot
I bought Turnip Boy Commits Tax Evasion last week and loved it. Very short and pretty easy, but hilarious and well-made 16-bit Zelda-type game. A bit pricey even at $8.99 for its length, but I thoroughly enjoyed it.

I played FF7 when it came out originally and it was a masterpiece then and I still believe it is a masterpiece now. It's the generation of RPG's that came out after Super/NES. It's not as hardcore as some of the originals, but there's still a LOT of content in FF7. Also there is probably a good 20% or so that's optional that you can skip and can be more advanced than the main game play, so it's up to you how deep you want to go and there's a whole area that's a 'fun zone' that you can skink as much or as little time as you want. It's definitely aged a bit, but the story and game play is solid if you don't mind the graphics though it was game changing at the time. To me it was the last GREAT Final Fantasy game (although some say 7 was when the series started to go down hill). I always recommend the old version of FF7 to anyone (not the new crappy 'reimagining' recently done. Just my dollars worth of 2 cents. ^.^
If a surrealist/absurdist, story-driven, text heavy game with artful visuals appeals to you, I would highly recommend Kentucky Route Zero. One of my favorite games of the last decade.
I am also looking for couch coop games but for 2 people. I am not sure on the rest of the games but Trine 2 is fantastic couch coop for 3 people.
From my partner and my perspective, these we enjoyed a lot. Cuphead. Cadence of Hyrule. Overcooked 1 and 2. It Takes Two. Box boy box girl. Part time UFO. Not sure what's on sale but those are all fab games.

So these are some good recommendations, but none of these are on sale, to save people some time.

I don't like rpgs and I love FF7
Moving Out, Overcooked, Tool Time (something like that). All good multiplayer.
