Of the 8 chef's knives I've used in the last several years, my favorite two are made by Zwilling (my ranking list).

My absolute favorite is the exact one that's on sale!

One quick note on Zwilling knives: If your budget allows, purchase only their products with the Twin logo, as opposed to the Solo logo, which is generally listed as "J.A. Henckels International." (image of both logos for comparison) The Twin logo products are of higher quality, whereas the Solo logo products are made to widen their audience by having lower prices, lower quality, and often sold in department and discount stores.

I hope this helps,

TV, thanks for the input here. How do you rank these deal? Specifically on your recommended 8" price of $60? Is it a steal?

The steak knives seem nice. Probably a good deal for pro forged.

I rank my knives based on real-world usage cutting a variety of foods. Things I specifically pay attention to are ease of use, how much pressure to cut through foods like meat, how comfortable it feels, and overall experience. When ranking these knives, I don't factor in their price whatsoever.

I have never purchased knives that are marked as "2nds," so it's difficult for me to say whether this is a steal. If it were brand new, I'd happily purchase a second one for $59.99.

I hope this helps,

What's the actual quality difference? Looks to be the same steel. Personally I like to have specifics instead of just knowing something is "higher quality". What specifically is my extra money going towards?

Which knives are you comparing? A Zwilling knife versus a non-Zwilling knife that you're using? Do you know the brand and model of your knife?

Disclosure: It's been many years since I've used knives that aren't made by well-known manufacturers.

I can try to help, regardless,

For what it's worth a lot of the sale prices are the same at other places like Williams Sonoma at this time. I think I'm going to wait until their end of year sale

I highly recommend Victorinox RH Forschner BladeSafe for 6-Inch to 8-InchKnife Blades https://www.amazon.com/gp/product...0DER&psc=1

It fits all my chefs knives, santoku, nakiri, and utility knives up to 8" blade - with or without full bolster. Very nicely made from quality plastic with 2 clickable locks securely keeping the edge inside. The price history suggested that it can go down below $3. I bought mine last September for $2.89. Price history from camel is attached.

I'm replying to your comment comparing the different Zwilling lines - you said get Zwillings with the twins logo. I'm just wondering where the extra cost goes if not the steel. The handle? More complicated manufacturing process?

I don't doubt that their higher end ones are better quality in one or more ways, but I'm wondering if the benefits are things I might care about.

The thickness, composition, grind and heat treatment of the steel. Forged rather than stamped steel. Attention to the design such as the bolster. Manufacturing in Germany rather than China.

The 7" Hollow Edge Santoku is actually part of the Pro line instead of Gourmet (forged vs. stamped, if you care about such things).

Picked up the forrmation cordon bleu small knife and curved peeler. Excellent knives, great steal and not possible to buy online elsewhere, however, its worth noting there were scratches on the blades. Normally not a big deal but it looks like they mark each scratch or blemish in the same fashion with a center punch or deep divot mark maid by a laser etc. Not a huge deal but it draws way more attention vs the actual defect. Its identical on both blades.
