Worth picking it up at this price or holdout for whenever they release next gen? Also debating on 16gb ram version as I do graphic design. Not outputting 4K video but I normally have 2+ adobe programs open. Anyone have experience running that on 8gb ram?

Adobe Photoshop and Lightroom will benefit from 16GB. Both apps love RAM. Apple refurb store has 16GB models from time to time and generally is 10-15% off

Almost everything benefits from RAM because the OS caches as much as it can. People with 8GB will regularly see most of it used while those with 16 will see 13-14 typically occupied. The Least Recently Used data gets evicted as necessary.
It's snappy and fast even with 8GB, it's only when you're working with very large resolutions or have a lot of layers being combined that paging out might become a problem
Is 16 better? Duh. Is it worth 40% more? That really depends on the user. Return periods mean you get to try it out yourself and decide
Also worth noting that edu/veteran/etc stack with apple refurbished so you can get a deal there -- 15+10% off

Fair points. My personal experience with 8GB M1 Mini was OK at best. A few masking layers in Lightroom Classic editing a 24MP photo, and could already feel the speed slowing down. Lightroom was already swapping 3-4GB after all 8GB RAM was used. Can't imagine what it would be like if Photoshop is open at the same time.
