Nvidia messed up their lineup. 3060 12 GB was a knee jerk reaction to AMD, 8 GB on 3070/Ti is low, 10 GB on 3080 is low, 8 GB on the 3050 is arguably too high and contributed to a fake MSRP. There is actually a 3080 12 GB (not the Ti) that was thrown out there as a money grab (it has about 3% more cores enabled, and +$300 to the MSRP).

With the upcoming 40 series, I think you can expect a lot more sanity with the VRAM amounts, or at least overcompensation.

Yes, people who want/need serious performance do. It is primarily marketed as a gaming machine and this is primary customer base but it is superb at a number of other things like video editing, machine learning, crypto mining, virtualization, game development,... Trying to do any of the above with your average thin and light machine is asking for a lot of pain. Ofc if the only thing you do with such a machine is browse the internet and type in word this is not for you...

My issue with these is always they never use the mobo I would. I'm surprised at 3600 mem, but what are the timings? 1tb nvme, gen 3 or 4? I get they need to make money, but it comes down to the weakest link in the chain, ruins the package.

One correction though: RAM should be CMW32GX4M2D3600C18 (Intel XMP), not CMW32GX4M2Z3600C18 (that one is for Ryzen).
