Bigger, brighter screen. If the camera operator is trying to record in HDR, (s)he can use this screen to actually see what (s)he is recording in true HDR
Higher quality recording. Cameras often put out higher quality video out of their HDMI port than they can record inside the camera, which are usually limited by the camera's ability to compress the data & write it quickly enough to the memory card. This recorder also allows for an even higher quality format called "ProRes RAW" that is blocked by patents from being included internal to cameras.
Longer recordings. Lots of cameras (especially from Canon) are limited to recording 29 minutes and 59 seconds because in the past there were additional tariffs for "video cameras" that could record 30 minutes or more. These cameras will output an HDMI signal indefinitely (since that's not the camera making a recording) and this Ninja V will record that HDMI signal for as long as storage/battery allow.
There's a lot more, like better scopes, swappable media, all of Atomos's livestreaming and I/O add-on packs, but these 3 are the highlights.

Seems like it's a recording monitor. Not sure why this instead of your smart phone.

The cost of the Ninja V, batteries, accessories and a 2TB SSD is cheaper than 2TB of fast cards. If you only did HD recordings, slow and cheap SD cards would be fine.
It can record in ProRes, which is easier to edit and looks better than most internal recordings, though the file sizes are much larger.
It also gives you a nice big screen to help frame your shots, along with useful tools like waveform, which is way better than histogram.
