fake 4k still has hdr (dolby vision on chapter 3) tho..not to mention this is cheaper than the blu-ray only [blu-ray.com] or bd-dvd combo pack [blu-ray.com]s, currently.

and yes, the first one is native 4k while the other two are upscaled. they've all got dolby vision and atmos

so my understanding that these are the actual discs plus the digital copy, I would assume you can add the digital copies to a plex server/library?

Not sure about the digital copies, but only the third film has Dolby Vision on disc

Digital copies will redeem via Vudu (probably an itunes option as well). Movies are not movies anywhere compatible. Vudu has apps for every platform including most modern smart TVs so just play it through that. You do not get a copy you can download.
