768P is sufficient for a 14". You can upgrade the memory and m.2. One 8GB stick would give you 16GB.
Edit: Turns out this CPU is slower than Pentiums. It is designed for Chromebooks not Windows.

Even with the rather basic CPU and tiny SSD it's probably still performant enough for the average user... but the low res screen is going to look really really bad. Text clarity and screen real-estate really suffer at such low resolutions. Most people have phones with higher res screens than this, so when it's blown up to 14" it's possible that even your grandmother will comment on it being subpar.
Because of that, I don't think this is a great price.

If the low-res screen on the HP is ever irritating or limiting... too bad, you're stuck with it forever.
Also, it's worth mentioning that the "Pentium Gold" in the Lenovo is, effectively, what an i3 used to be before AMD brought on the competition. This isn't a netbook\tablet CPU the way some Pentiums were a few years back. It's nothing amazing but it's perfectly fine for normal use.
EDIT: Just realized that the Lenovo is a 15" versus the 14" in the OP. Personally, I can't imagine being that particular about 1" of screen size while not caring about using what is probably one of the worst screens on the market in 2022 (220nit 768P... blegh).
