Unlike the costlier Ryzen 5 3500U, Ryzen 3 3250U is not Zen+ based. It makes use of the ageing Zen architecture and is manufactured on the same 14 nm TSMC process as Ryzen 2000-series laptop-grade processors. This has several repercussions; the limited RAM support is one of them. DDR4-3200, DDR4-2933, DDR4-2666 modules are not supported here. It's just the DDR4-2400, DDR4-2133 and lower on.
It's not a horrible chip compared to some of the ~$99 Chromebook options out there, but I'm not feeling $280 for a dual-core Zen1. How about $150 or less.
This would make a great chrome flex chromebook if only it had FHD resolution. The Ryzen would blow away all the Celeron N4xxx in most chromebooks.
It has been pointed out that ChromeOS Flex does not support Android or Crostini, so I hope that is not a deal breaker for you. If they add support for both of those in the future, it would be a lot easier to recommend.

That Snapdragon OLED 2-in-1 detachable for ~$280 the other day would be a much better option for the "light" stuff, especially video watching. Assuming that was not a price mistake and the $100 off coupon actually worked.
