Above is correct. Except, I believe in this case, carbon steel does not necessarily mean higher carbon content; rather lower chromium, thus non-stainless steel and called carbon steel knife. Carbon steel blade generally does not have better edge retention, but greater toughness that can take more abuse and harder use. Much easier to sharpen vs. stainless counterpart.

That's a really good price for the carbon blade with the basic polymer sheath. Near the lowest price according to Camelcamelcamel, I believe.

The survival sheath looks like it includes a sleeve that slides onto the standard polymer sheath, and that sleeve holds a ferro rod, which is also included. Also a bit of paracord.

For a jump from $61 for the carbon blade with the basic sheath to $88 for one with the survival sheath, for me it's not worth it. While it's nice to have the ferro rod parked right on the sheath, it isn't absolutely necessary.

The survival sheath would be cool to have, and I'll probably look for one sometime later. But the extra $27 isn't worth it to me.

Whether the jump in price is worth it to you, however is up to you.

As an aside, the survival sheath for the Garberg is different than the one that comes with the Mora Bushcraft Black knife. In addition to the ferro rod and rod holder, the Bushcraft Black survival sheath also comes with a small diamond sharpening plate mounted on it. It makes the survival sheath for the Bushcraft Black a more compelling option over the standard sheath.

Edit: I now realize you are asking whether the stainless or carbon blade would be better suited to your use case. If you are doing overnighters and backpacking and using the knife for standard camp tasks, the stainless would be plenty durable enough for what you need to do. It also has the advantage of being stainless, requiring less maintenance and mindspace to keep it in shape. As for sharpening a scandi ground blade, it is somewhat involved. I don't know whether the stainless is an easier material to sharpen vs the carbon steel, or vice versa.

For those who are wondering. Polyamide is just another way of saying Nylon. It is a Nylon handle. Nylon is generally very impact resistant but prone to scratching as it is relatively "Soft" as a plastic. Just FYI.

Because bushcraft knives are primarily designed for finer woodworking, they often don't have prominent finger guards. That's to facilitate choking up on the knife for finer and more direct control of the blade when carving.

That said, people often do put their bushcraft knives through some rigorous uses, such as batoning wood for fires (which apparently some knife manufacturers consider abusive treatment).

Bushcraft knives are also often pressed into service as general purpose outdoor and utility knives. So a good bushcraft knife has to be tough and durable despite being primarily used for carving.

The article is a good read and might explain why bushcraft knives often don't have large guards, as a survival or field knife might.

For hand guard, Craftline pro S is my go-to knife. I didn't had any problem with rat tail tang. If I do need cut trees I'd bring a machete.
