It's dried. Good thing to have for those times when you run out of frsh onions or want to adjust the liquid content of your dish(dry onion will absorb the liquid and make it a bit thicker). But be careful not to over do it, as half a tbsp is plenty. Also good for when you don't want the onion texture in your dish.

BTW, the italian seasoning alao has a 20% off coupon for me, and is sale price. I put it in any dish thay has marinary or any kind of tomato sauce. It's decent, though a bit heavy on Marjoram. I mix in my own oregano extra.

Only thing I don't like about this is that the sugar content causes clumping over time. Dehydrated onion is more useful to me but I have smaller containers of granulated like this as well.

For those with a Sam's club membership it's $0.34 per ounce instead of this at $0.37. Its a bigger container, 20oz. Seems like a good deal to buy this one if you don't have or need the sams club size.

Sadly, 20% off coupon will not be available if you used it for another McCormick product. I used it for the extract, but would have preferred it on this or a spice.
