Back in the day, well maybe recently as 2019 or so during my fat years, my late night guilty pleasure when I was too lazy to cook would be a poor mans hot pot of ramen, any deli meats, whatever veggies I had in the fridge, a hefty scoop of rice and a bunch of hot sauce, jalapeños and red pepper flakes. That was my comfort food lol. I may still once in awhile have an udon bowl or tonkatsu bowl bought from Costco, but I avoid using the included seasoning packet or oil and just use some lower sodium soy sauce, srirachia and chili powder as alternative, although it doesn't taste as good as the packets. I still haven't found a healthier alternative to noodles or ramen. Tried shirataki noodles but the preparation and smell is a turn off. So now I just have regular ramen, noodles on rare ocassions. I currently have some Costco spicy mala noodle packs that are expired in the last couple months, so I might force myself to eat them, rather than waste it
