SEALED bottles of brake fluid have NO expiration date. Assumed to be stored in climate controlled room in house. This is what @Timoteo7332 was referring to. UNOPENED brake fluid for "lifetime" brake fluid changes.
Manufactures may say TWO years for unopened. But even w/in that, some offer conflicting info. Ultimately, user discretion. BUT, plenty of people have safely used UNOPENED 2+ year old brake fluid w/o any problems. One can also use test strips to test an older UNOPENED brake fluid bottle too.
I don't know abut DOT5 (USA-silicone based; Euro-ester based) if it will absorb moisture, esp since Silicone based. But I don't have a vehicle that requires DOT5.

Don't forget there are people also driving around w/ brake fluid that has NOT been changed w/ any regularity or even at all!
Its kinda like motor oil. All motor oil manufactures say 5year shelf life for UNOPENED and stored in climate control. MANY MANY MANY people have used virgin motor oil >5 y/o w/o any problem.
Milk will often last a little bit longer BEYOND the printed expiration date. I know some people who will toss out milk the moment the exp date is reached. Most people I know will use milk until it smells/tastes funny.
So there you go. At the end of the day, it's your car, so do as you please.

You are correct that if unopened its good for a long time but it has to be stored in ideal conditions FYI. I have had a car with brake line issues and have changed the brake lines, calipers and had the fluid sitting in my garage for almost 5-6 years where temps can get high and low and even direct sunlight depending on the day/time if garage doors are left open (summer, kids etc).
I ended up using the bottle regardless but read enough to have a pause that its not a good idea to have bought 4 bottles and only use 1; for most it will be okay if its stored good...just dont bulk buy it in my opinion.
Similarly I purchased a lot of oil and due to price mistakes and got 0W20 for like $8 for 5qt and then the pandemic hit, ha so might be sitting on it for 6-7 years which I think should be fine as it would have been used up in less than 5 years based on how we drive (fingers crossed).
