The orchid set is really well done, I do recommend keeping that one. This set does not contain a Lego vase and, as I understand, is quite top-heavy so it's recommended to weigh down the vase you use. On the plus-side though with this one you can use your own style vases or even your own bud vases instead and spread out the various flowers, if desired. Orchids have more complexity to the stems and unique building instructions. Slightly increased difficulty though too but worth it.
The bouquet contains 756 pieces and orchids contain 608 pieces, so technically the better value would be the bouquet if you're looking at straight piece comparison. But honestly the botanical collection is a lot of small and unique parts for stems so they're not really reusable beyond the original purpose anyway.
I have most of the botanical collection (minus the bonsai tree and the bouquet is currently on the way) and the orchid and succulents are my personal favorites. Birds of paradise is neat but orchids really hit it out of the park.

How does this compare with the Orchid set? I bought the Orchid set when it showed up, but this set is actually on sale so I'm considering exchanging for that one for this one.

These are really nice. We have two sets in a vase and it's beautiful. Most guests think they are real flowers until they get close. In the bottom of the base we have clear and blue lego to weigh it down and keep the stems from shifting.
As far as assembly my 5 and 7 year olds were able to assemble with little issue.
As others have mentioned doesn't come with a vase, but in my case that meant I could use a larger vase and add in the separate red roses, tulips, and sunflower sets to make it even more bountiful a bouquet! Now I see above I'm missing the orchids but those look like they'd make it even more crowded.
Without the right vase and filler, it can be quite awkward to arrange because some of the flowers are quite delicate and finicky. You need a vase and filler material that is sufficiently heavy, wide mouthed, and balanced... and filler stiff enough to hold the stems where you want them.
Once you do, however, it is a great present and conversation piece. I gave one set for Mother's Day and she loved showing the photos to her friends.
