Costco sells baked chicken at a loss, but it's located at the back of the store. As soon as you put another food item in your cart, they've broken even and they've made a profit from item #3 onwards.

Same reason why grocery stores have produce and bakery at the front of the store and milk, eggs, bread at the rear of the store. The colors of the produce and the smells of the bakery entice you to buy more and you have to go through the store to reach essentials which increases the chance you will buy something else. Same concept applies to restaurants and the menu layout, color schemes they use, etc.
There are entire courses in colleges that teach these things.
