the same way except by exerting more strength, brute force and grunting.
Pretty much what you get with these knives is a longer lasting sharpness in a thin profile to allow it to be more precise. So in some cases like say cutting sashimi you want a smooth clean cut, not a rough grain so you need a sharp/precise knife to do that.
You can still do the same job with your aldi knife but if you served rough grained cut or squished sashimi to your guests they would not be too excited about eating it

The rest of it is marketing, status symbol and the illusion of feeling that you are a semi-professional chef
