I'm using Adolf's meat tenderizer and 1/4 cup of Worcestershire sauce for my beef jerky marinade.

Is this overkill and should I choose one or the other?

Have you tried mechanical meat tenderizing? It's commonplace in the jerky-making industry.

It will probably do more to tenderize the meat and the other stuff is mostly about adding flavor.
