Regular price on this Henckels Pro is $170. It has a special ridge for keeping diced veggies and other foods from sticking to the blade. I imaging some will be polarized by the ridge, but this is a good price for an 8" Henkels Pro.
- Unique ridge pushes food away from the blade and prevents sticking, whether chopping, slicing, or dicing
- Sigmaforge knife is precision forged from a single piece of Zwilling exclusive high carbon stainless steel
- Full tang with curved bolster provides solid grip and balance; comfortable and traditional 3-rivet resin handle
- 57 Rockwell Hardness; 15° blade angle delivers outstanding cutting performance
- Friodur ice-hardened blades are remarkably sharp, stay sharper longer and highly corrosion resistant
- Made in Germany with a lifetime warranty
The Zwilling Pro Smart Ridge Chef's Knife is designed for slicing, dicing, chopping, and mincing of fruits, vegetables, meats and fish. The ridge on one side of the blade helps push food off the blade while slicing. Zwilling Pro is designed by architect and designer Matteo Thun, offering beauty and function with a classic design. The wedge-shaped blade and half bolster allows you to cut along the entire length of the blade. The unique curved bolster supports your thumb for extra grip, comfort, control and safety. This entire collection features precision forged knives made from a single piece of Zwilling exclusive high carbon stainless steel. As a result, the knives have improved quality consistency, lasting sharpness, and perfect geometry. In addition, the steel blade goes through a special ice-hardening process called Friodur. This process changes the molecular structure of the steel improving the cutting properties providing a remarkably sharp blade and ensures a long lasting cutting edge. Each knife is hand sharpened, polished and laser controlled to assure the cutting edge is accurate along the full length of the blade. The blade is enhanced with a traditional 3-riveted resin handle. Made in Germany with a lifetime warranty.

I believe this knife has a ridge on only one side. Also, as a reference point for sale prices, this knife was $60 on cutlery and more for their anniversary sale (maybe a month ago).

They post their sale prices on Amazon, figured I'd suggest for the easier returns. That ridge is not aesthetically pleasing.
That's a very good bit of info, thank you!
Japanese knives tend to use harder steel that's more brittle. They are actually less suitable for the general public who aren't into knives. Zwilling's processed x50 steel has a great balance between edge retention and durability.
Agreed.
I have a Torijo 9" Chef's that I use for bigger/more intense things, and a Henkels blade for the everyday stuff.
The Torijo is a great blade, but dragging out my huge wooden cutting board can be a drag when I am cramped for time/space. I use plastic boards with the Henkels, and it is an easier process.
