In testing various generations of iPads of my family members, I think real-world performance hits the point of diminishing returns around the 8th gen (2020) iPad. I recently tested the 8th gen and current 9th gen iPad alongside the new iPad Air with the M1 chip. They load webpages within a split second of each other. The Air still stutters in dragging/zooming maps in web browsers, which makes me think the hardware has outpaced the software at this point.
If Apple puts an A14 in the new iPad, I think real-world performance will be basically identical to the current iPad. You may lose the headphone jack also.
My strategy would be to buy it at a store with a 30 day return window and not open it until and if an updated model is released. This has worked for me in the past.

Movies depends on what quality and compression. 720p HEVC x265 will likely be fine. If you want to carry Full HD or 4K movies (makes no sense for this size), probably not enough for more than 6-8 hours flight.
