I have a bro-in-law that swears his soundbar is "amazing surround sound"; nobody has the heart to tell him he's serving mcdonalds and swearing it's wagyu. I guess everyone has their own opinion on what constitutes "good enough" vs "incredible" but when I plop people down in front of even my slightly-better-than-mediocre 10yr old Yamaha's 5.1 setup (Polks & HSU sub), most jaws drop.
Of course soundbars are easier. Of course wireless is easier. It was a PITA running wires through exterior walls! When it comes to audio, there will always be a consumer striving for "great", often after evolving through a series of "good enoughs" ... you can find their old soundbars on craigslist or the dump.

I sold my A/V receiver several years ago. It was collecting dust. I prefer the headphone experience.

While soundbars are convenient and simple, they are nowhere near what surround speakers provide.
I get your point, but I would never settle for a soundbar. I love my HT setup! (My 5-year-old HT setup still runs great: Onkyo RZ-720, Martin Logan surrounds, LG B7 OLED, Panasonic UB-820, with a high-end PC connected along with a fire stick 4k max. I'm happy!)
