I share your concern, but my wifi router allows me to block internet access by IP which prevents any phoning home. My older POE cameras work fine only having access to the internal network. I can still record from them.

If you have multiple 4k cameras you don't want wifi, and you have to run power anyway

higher the number the larger the magnification, its like a camera zoom lens, 2.8 is wide angle, 6.0 is telephoto, comparatively. Most middle of the road cameras are 4.0. 4k makes running less cameras with a wider field more doable but ideally you want the camera that covers just the area of interest and no more to get maximum detail.

You might be trying to select the 2.8mm variant. Code seems to only work on the 4.0mm and 6.0mm versions.
