The Tojiro DP line is a great bang for the buck. What isn't mentioned is that it features stainless clad VG10 core. VG10 (HRC 60-61) is typically only available with more expensive knives. If I you are looking for a good Santoku this knife is a great place to start. You will get the most out of it by proper use of a good whetstone. WAS a great bang for the buck but the price got jacked up even before covid. The knife over all is ok at best, brittle VG-10, unpleasant feel when sharpen and came with a fat grind. The current sale price is similar to the MSRP price 3 years ago, it's a decent buy .

Prices get jacked up these days. Knives are not immune to that fact. I have never had a hint of problems with the VG-10 steel being brittle. Brittle vs HRC hardness is a known tradeoff. I have never seen a Tojioro DP knife that had a "fat" grind. What I have seen is the opposite. Yes, this is an entry-level Japanese knife and I think it is still is a great bang for the buck in today's market. Do you have suggestions for something noticeably better at this price point?

The Babish knives [amazon.com] have been getting decent reviews and for the price it is good buy as a kitchen beater, it is German steel so it is softer than VG10 but is easier to maintain using a honing rod rather than using a whetstone which I think most households don't know how to use properly (the $5 sharpening at Sur La Table or Williams-Sonoma may take too much steel from a Japanese knife)

Zwilling J.A. Henckels Diplome 8" Chef's Knives goes on sale at cutleryandmore from time to time, got mine for $60 awhile back, F61 (AEB-L) and come with a better fit&finish. If you're limit to a $80 budget or less, sure buy a Tojiro if you want but I find the performance is really lacking. Their current prices are no longer worth it.

Cutleryandmore is currently showing a price drop from $150 to $100. I'm a relative novice to next level knives so I won't attempt to compare VG10 to FC61. This wouldn't really be the right forum for that discussion.
