2% cashback is not bad, although citi double cashback has the same, but offers $200 for opening that credit card.

Honestly easiest option would be to call Apple, seems like an unusual problem to have
My mother got the 100 a day or two after making a in person purchase, presumably when the charge went from pending to finalized.
Shipments don't get charged until they ship usually so would take longer.
Haven't gotten the $75 yet, my Nike order is being delivered in a few days, not sure how long it would be after that.

The 100 was, I'd assume the same for the $75. No other notice, just showed up on the card.
The cashback amount is 2% if you use apple pay, a bunch of other cards does 2% already without using a mobile wallet. There is 3% on the Apple store, but again it's like only 1% more, so even if you buy like a $3000 mac, that's just $30 more. BoA credit card also offers 3% on online purchases, and Paypal credit card does too if using Paypal.
Am I missing something? Is there any additional long-term benefit of getting this card?

I just got it when it came out because I wanted an Apple card.

It's a Mastercard and has no international transaction fees. Mastercard and visa are good networks especially for international travel. Besides that no annual fee
You can order a physical titanium card from the wallet once you add the card. This card can be used at any location like a regular card but I believe if you use the physical card cash back is 1% only
