If you're limited in time Zoo is a better option especially If you're staying around the city area, Safari park is about 40 mins from the Zoo.
Safari park is bigger in term of space to allow the animals to be more open and in their environment.
Zoo offers a more commercial style experience but plenty of stuff to do and see, plus they just opened a new kids area.

any advice on legoland? I have a 1-year old and a 4-year old and this would be their first time. I am particularly thinking between Oct or Dec (for holidays) and also thinking if legoland hotels worth it.

legoland is made for the littles and should have plenty for the 4year old to do. Some things will be a little too big for them though depending on how tall he/she is.

I can't speak to the hotel but i've heard a lot of good things about it. There are other hotels in the area that are nice, just depends on the price/deal difference.

I would say 1 day is plenty to do rides and such but if you want to check out the different shops and exhibits more than just a "look & go" you may want a 2nd day. Just depends on how you pace yourself and how well your kids behave. Our family of 4 (7 & 5) did legoland in Florida earlier this year and only did one day and got the majority of what we wanted to do done. However if we had an extra day we could have taken our time.
