Nonstick surfaces are a wear item. I've used dozens of tramontina nonstick pans and they all last as long as they are supposed to. I think you'll find that your opinion is among the tiny minority as Tramontina makes great products.

Boil water on it then use salt to take off the excess stuff. If that doesn't work, then barkeepers friend.

What are the best use cases for stainless frypans? I'm sure I would get use out of one but I'm not sure what size to get. I usually use my non stick chef pan for everything unless it's just too big.

I always thought you're supposed to do high heat searing and what not in stainless but the products pages say "Tri-ply clad cookware construction requires only low to medium heat to sauté, fry or cook most foods. Using a high heat setting causes the cookware to become very hot, which may cause foods to stick, burn or scorch if added to very hot cookware."

Mostly high temp/sears at a temp that would destroy nonstick. Also, stainless steel is non-reactive so if you're cooking something... like tomato sauce, the acidity won't react with the surface, unlike if you were to do the same in cast iron pans, the acidity in the food eats away at the seasoning.

I personally like 12" pans. I find 10" a little on the small side, and anything 8" and under just sits there unused.

Wish they had a 2.5 or 3 quart sauce pan on sale. I have a 2 quart and it's just a tiny bit too small for the amount of pasta I normally make.

why is all clad brand so much more expensive (think mine was $99 for something that looks very similar)

All clad is made in the states. It's good to support american jobs. I also find all clad quality better. I have a standalone tramotina 3 ply I got from costco one time. It's not bad and I use it all the time but I find it scorches more easily than my larger sized less convienient all clad pot . Maybe it's the size difference no idea.
