With a physical SIM, I assume I can wait until next month to put in the SIM card but if I provide them with the ESIMs IMEI number when I purchase the Mint Mobile plan, will the eSIM be activated immediately? Or, is it possible to wait until my current Verizon MVNO plan runs out before "activating" the eSIM?
The other option would be to get a SIM card and follow the procedure outlined by silicali above, as long is it does not affect the deal terms.

Note, this deal is also available through Best Buy as a physical SIM Kit. I also bought that to migrate a different phone (iPhone 12) from Visible eSIM to a Mint Physical SIM, and that was fine too. I purchased the SIM kit, sat on it for about 3 weeks, and then did the migration 2 days before my Visible plan ended. It was painless. I would recommend this approach if you want to lock in the discount, as the Best Buy plans have an activate-by deadline of early January, I think.
I've done the latter and know for certain that it was used since I help my friend activate their line yet despite the service being active for more than 72h neither of us has received any bonus, email or sign that it was processed. I'm told to keep wait for 15 days yet support cannot confirm whether the referral has been actually been picked up or if it's stackable with this deal. The mint app has a pending referral which list 0 and I see a lot of complains online about referrals not getting through...
