Serious question:

What are some things that a laptop with this much power and ram, small screen, but no discrete graphics be used for?

No, you're mistaken with the maximum supported Ram.

There are plenty of applications which need a lot of ram and CPU power but not graphics processing. It's a business laptop and literally every company offer similar configurations for their Business lineups.
Examples are coding, database operations, huge set of data processing, encryption and compression work, running virtual machines, basic CAD design. These are just some common examples but I can tell you that there are plenty of other usecases as well.

Ok thanks for helping me to understand. I have no experience with all of your examples. While I have worked in an office environment before, all the people at my workplace (500) had the oldest laptops. Would have been nice to have powerful laptops... and a better internet connection for that matter.

The main selling point of the Ryzen 6000 series is that the iGPU is about as powerful as most lower-end discrete mobile GPUs.

Yeah, this laptop is primarily aimed at professionals. It's got great battery life, 8c16t CPU, and 2 SODIMM slots which is extremely rare nowadays, SODIMM slots mean you could upgrade ram up to 64GB if you needed to. I'm a software dev and Elitebook 845 and Lenovo T13/T14 are pretty much the only the only laptops that I would every buy for work.

I like high res screens, but for some really old windows programs I run they don't play well with them. So a 1920x( ) screen is just easier too.

The Processor is different, in case you did not notice. That Intel Processor has better single threaded performance, lower multi-threaded performance at dame power and way higher power consumption, resulting poor battery life. On top of that, the integrated graphics on this model is over 20% to 30% faster than the intel model. 64GB memory is a huge capacity and most normal and even somee demanding workloads are fine with 16GB and 32GB is more than enough. If you have special usecases which require 64GB ram, then go ahead. For majority, I would say, this is better.

For whatever reason, the specs do not specify whether the display is a touch one. Would any of you happen to know?

Yes, search Elitebook 865 on HP's site and use the same coupon. The best deals are on configurations that are already heavily discounted.

Not touch

It has a fingerprint reader, which is part of Windows Hello. Maybe you meant facial recognition login via webcam, which is an option but not on this configuration.
