tl;dr is that speeds will be the same for all connections.

There are nuances such as how your 1000 download speed will be divided up between all connections if each of them are downloading at full tilt, but I feel like the spirit of your question is whether this device will be a bottleneck in your network, and although theoretically yes, in reality the impact is so small it'd be within margin of error.

Your cable guy is correct without getting into the details; 1K MB throughput is only reliably achievable with a wired connection (there are latest model routers that can achieve this wirelessly, but they're expensive, requires newer devices that are compatible, and still suffer all the downsides of wireless signals).

Yeah, I have a U6-LR AP plugged into and a Reolink 4K PoE camera. Ubiquiti stuff is nice since it automatically acts as a WiFi bridge as well, pretty useful if it's something needed in your setup.

According to my dashboard for their power consumption...

U6 Mesh: 5.53W
U6 Lite: 4.86W
U6 Pro: 6.69W
G4 Bullets: 3.1-3.8W

Should power them just fine with this switch.
