Edit: people downvote me for this SMH. Still good for the price range but this drone came out in November 2020. It would surprise me if they don't release a new budget drone next year.
I have this drone and I love it. It's very small, fits in your hand, and folds up nicely in the bag, and I'm normally not a "buy a bundle with bag" kind of guy. It was so small that I was able to take it on my Norwegian cruise (security didn't catch it) when their policy states that they ban drones and got incredible shots of Bermuda. It's very simple to use. Takes great photos and video. The first time I flew it was right after a tropical storm came through, like first break in the rain after, and the wind was 25+ mph, and I had no issues controlling the drone. I got a couple of "high wind warnings" when I was up 300+ feet, but it's just a temporary warning. The auto land feature is cool but I like to land manually to practice. I also got stupid one time and flew it around the side of an island with buildings between the drone and I, when it was already almost a mile away, and it lost connection… after a full minute it reconnected and it was flying right back to me (it's programmed to return to its takeoff spot if it becomes disconnected). Super cool that he came back!
A couple of cons. You will buy an extra battery pretty soon because it's so much fun that 20 minutes goes by very quickly. It's also not the biggest/best sensor, especially compared to the Mini 3, which I may be buying soon. I also went to use it one day and it wouldn't fly due to some internal (I think IMU) error. I have the extra warranty through DJI and after chatting with support, they suggested I send it back to them, and they sent me a different refurbished Mini 2.
Overall I'm very happy with it and it's a good starter photography drone that can take some great photos without taking a ton of space if you're going on a trip.
If you're not interested in taking photos or videos, just flying it, I would get a different drone or one of the DJI POV drones.

If you are really dead set on buying a drone for them, look for an fully enclosed toy drone. The ones where the propellers have a cage, and aren't designed to fly 6 miles away. They're far more controllable and are plenty of fun for the kids.

The Mini 2 is our high risk, disposable drone. Footage is good enough, and we use it in situations where we won't be too disappointed if it crashes into a wall. If you're just starting out, I'd suggest you get this, but with the fly more combo and DJI refresh. You will crash your drone within the first 20 flights. That's ok, most are recoverable if you take it slow.
The Air 2 does 80% of what the Mavic 2 Pro does, but it really far more "consumer" than the Mavic 2 Pro due to the controller. It also just isn't that great during golden hour, which is when we like to shoot most.
The Mavic 2 Pro is our big boy drone that we use more for long range, high winds, or low light.
Overall though... I'm eyeing the Mini 3 Pro. That thing seemingly defies physics - long run time, better wind resistance, and a surprisingly large camera.
Do you have another model that you'd suggest? I'd like something quality. My son asked for one and in my opinion a gift that gets him out in the world as opposed to say, a game console, is totally worth embracing. His hand-eye coordination is impressive.

Don't buy anything without a good, reliable review; lots of small drones are terrible.

Can an 8 year do it? Yes, likely far better than you or I. Lots of young synapses and FPV experience on game consoles make it easy.
